Comfort Food Sunday! - Polenta with Sun-Dried Tomatoes, Basil, and Goat Cheese
Sometimes Sunday is the perfect day to do meal planning, grocery shopping, and cooking for the week. But mostly {let's be real}, Sunday is for lazing around and keeping it simple food-wise.
Today, my Sunday was like that. We've had a chilly weekend in Atlanta with our first taste of snow flurries. When I came home from work yesterday, my lovely husband had a big steamy bucket of water ready for my popsicle-like feet {God love him}. All I've really wanted since then was to be at home, cuddle up on the couch, and eat some easy comfort food.
I am actually proud of myself. I did go grocery shopping. But first,
I snooped around my kitchen and pulled out a bunch of grains that have been hiding in the cupboard way too long. Specifically some polenta, barley, and bulgur wheat. I found some fun recipes, so I could use them up this week.
At our house, we love our grits and using the polenta tonight was spot on. Tossed in a chiffonade of fresh basil, some sliced sun-dried tomatoes and goat cheese and it was so delish!
Polenta with Sun-Dried Tomatoes, Basil, and Goat Cheese
Serves 4 {or 2 hungry people at my house!}
1 cup polenta
4 cups water, filtered
About 1/3 cup sun-dried tomatoes {I like the ones in oil}, sliced
Big handful of fresh basil, chiffonade
About 1/3 cup goat cheese crumbles
Salt and pepper to taste
Drizzle of olive oil or butter {optional)}
Bring water to a boil in a medium saucepan. Stir in polenta. Bring back to a boil and then reduce heat to low. Cook, stirring frequently, about 20 minutes.
Remove from heat and season with salt and pepper. Stir in sun-dried tomatoes, basil, and goat cheese {reserve a little for topping, for a pretty presentation}. If you like, drizzle the polenta with olive oil, the oil from the sun-dried tomatoes, or a pat of butter.
