Welcome to Happily Edible After!


I’m Shannon. I started this blog in June of 2012 so I could cook & bake at home, take cool photos and share it all with you. Here's some things to know about me:

I’m a baker and lover of all things pastry. 
I have worked in professional pastry kitchens and now run a local cooking school.
I dream about caramel and desserts scented with rose water. 
I'm a sucker for a good foreign movie.
My favorite places to hang out are bakeries, book stores, outside in nature, and in my kitchen.
I’m a Florida native, western North Carolina lover (where I went to college) and live in Roswell, GA. 
I am married to a fun-loving and amazing artist and graphic designer, Jay. He's got no problem being the taste-tester and food photo advisor.
Our cat, Luna, chirps like a bird, devours cat grass, is very attached to certain strings - she keeps us very entertained.
Yoga is my favorite way to de-stress and get grounded. 
I taught yoga in Atlanta from 2004-2014 and loved teaching my gentle yoga for cancer survivors class the most.
I am a cancer survivor. 
I'm a huge fan of PBS and "A Chef's Life".

Happily Edible After is my place to share sweet and savory adventures in my kitchen. I want to inspire you to bake, cook more dinners at home, experiment with unique ingredients, and go enjoy the restaurants in your neighborhood. 
Let's celebrate local producers, farmers, restaurants and food artisans & get out there to have some edible adventures!

  3. Great Blog! Loved reading all of it! I look forward to learning to cook new things in my tiny kitchen. So glad your ideas are on the healthy side. I hope to learn to make different breads someday and biscuits that you cannot break a window with.

  4. Hello Mira. So glad you found Happily Edible After and thank you for the compliment. I definitely plan on posting some lovely bread and biscuit/scone recipes soon, so stay tuned. As you know, it's not the size of your kitchen that matters - it's the love that goes into your food. Are Mattie and Chloe your kitties?

    1. Mattie is our tortoise shell kitty and Chloe is our silver Tabby. Both were shelter kitties and are great family members now. Mattie keeps us entertained with her frumpy,hilarious personality & Chloe is the prissy bug patrol leader. (Should have named her 'Terminex'). We look forward to more recipes! David likes cooking too. Luckily he likes cooking what I don't and vice-versa...so no competition there. :) Mira

  10. Just reviewed your posting of kale, couscous, squash & chickpea recipe. I am inspired now - to make a folder of these simple, healthy recipes that will help us lose weight and enjoy what we are eating at the same time! This morning I read a bunch of reviews and almost signed up for one of those "meal ingredient delivery services" like Plated, Blue Apron. Decided they are too expensive with too many pitfalls. Will be visiting my favorite foodie site more often . . . (Donna)
