Citrus & Avocado Salad with Pomegranate Seeds and Citrus Dressing
Happy weekend everyone! How about a tasty salad to brighten up your day with juicy winter citrus, creamy avocado, and zippy little pomegranate seeds?
It's a rare day if we don't have several avocados lurking around the kitchen.....and this day was no different.
I've been looking for more ways to get more fruit into my meals.
Quick and easy. And it's pretty. It's a keeper ♥♥♥
I don't know if you know....but pomegranates have some impressive health benefits. It is said to be the most powerful anti-oxidant of all fruits and provides incredible anti-cancer protection, immune boosting & heart health support.
As a cancer survivor, I love knowing that. Hmm, maybe I need to start adding some pomegranate juice to my smoothies!
Citrus & Avocado Salad
Serves 4-6
1 grapefruit
2 navel oranges
1 avocado, sliced
1-2 tablespoons pomegranate seeds
Citrus Dressing:
3 tablespoons grape seed oil
1 teaspoon sesame oil (yum-ness)
2 tablespoons orange juice
1 teaspoon orange zest
1/2 heaping teaspoon chili powder
1 teaspoon honey
salt & pepper to taste
Cut the rinds off your oranges and grapefruit. Slice them into rounds and arrange on your favorite platter or individual salad plates. Top with avocado slices. Combine all the dressing ingredients in a mason jar and shake well to mix. Drizzle dressing over the fruit. Sprinkle on pomegranate seeds. Serve.
P.S. Next time, I might toss some cilantro on there. It puts a smile on my face. How about you?
