Spicy Crock Pot Chickpeas


Time to dust off the crock pot ya'll.
I made this Spicy Chickpea dish the other night and it was an easy, soul-satisfying dinner.
Plus, it was a great excuse to work in a healthy, veggie main and get to use all my new spices from the local farmer's market. It truly smelled incredible in my make-shift Indian kitchen.

I know, you think about it occasionally, but it's probably not top on your to-do list. I'll tell you a secret....it feels so good to throw out stuff (especially spices from 2009....yikes!) and re-organize. I overhauled the spice cabinet and moved it to a drawer, so we could actually see and easily grab the ones we want. Hmm....professional organizer....perhaps I missed my calling.


Well, don't miss out on this dish. It's yummy over rice, couscous, quinoa, or any of your other favorite grains.

Spicy Crock Pot Chickpeas
Serves 8

1 tablespoon grape seed oil
1 large yellow onion, chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, minced
1 small jalapeno pepper, seeded and minced
1 tablespoon ground coriander
1 tablespoon ground cumin
1/4 teaspoon cayenne pepper
2 teaspoons turmeric
2 teaspoons paprika
1 1/2 teaspoons garam masala
1 15-ounce can of whole tomatoes 
2/3 cup water
2 15-ounce cans of chickpeas, drained and rinsed
1/2 teaspoon salt
1 lemon, juiced

4 cups cooked couscous

Heat crock pot on high heat.
Heat oil in a large skillet over medium heat. Add onion, garlic, ginger and jalapeno pepper. Saute about 5 minutes. Reduce heat to medium-low and add rest of spices. Cook this mixture for another minute and add tomatoes, scraping up any bits on bottom of pan. 
Turn off heat and place onion mixture into the crock pot. Add water and chickpeas and stir to combine. Cover with lid and cook for about an hour, adding water as needed. 
Alternately, cook for several hours on low, checking occasionally to add water if needed.
Season with salt and lemon juice and serve over your preferred grain.

  3. Hi there! You should be able to get the garam masala and grapeseed oil at Whole Foods Market. If you don't have one near you, try a farmers market. The garam masala could also be found in an Indian grocery store. Good luck and let me know how it goes!
